In honor of Chance, we make tonkatsu and call it schnitzel. The only difference between schnitzel and tonkatsu is the use of breadcrumb or panko. Talk about the "wurst"

As bavarian myself (who has eaten a lot of Schnitzel) i personally would salt and pepper both sides of the schnitzel before turning it in flour. If you eat it with lemon only it would be too bland otherwise. The sauce might make up for it tho

He made tonkatsu tho. Schnitzel uses bread crumbs. He did make mushroom onion gravy at least.

I was also taught to soak the meat in some cold water before breading it. The water will vapor ate during the shallow fry and make bigger air bubbles between the meat and breading

I’m German and this looks amazing! My wife and I are having a hard time finding fresh veal and good cuts of pork to make our Schnitzel where we currently live. This is a great idea to butterfly a loin. Thanks for that tip!!! Love the cooks you do.

I use a whole pork tenderloin. Not as big as Sam's but extremely tender and still juicy. I also use it in place of chicken or veal for my parmesan prep. Actually tastes a lot like veal.

I lived in the heart of Bayern for about a year in the 70s…I was thinking that Jägerschnitzel (my favorite) was the kind with the mushroom gravy. I will make this!

My mother was born and raised in Germany, I just made this recipe, put the gravy on a bed egg noodles, and substitute the soy sauce for “Maggi” reminds me of her cooking thank you for inspiration

I lived in Koblenz, Germany, and jagerschnitzel is served with brown mushroom gravy sauce, fries, and a salad of sorts! Looks good... gonna print this recipe up and try it out this weekend! Excellent job Sam!

This looks amazing, and I definitely enjoy Chance and Max's hand making an appearance. I don't comment often, but I thoroughly enjoy the videos. Having 2 of Sam's cookbooks has been amazing. My son and his fiancee use them almost as often as I do. We especially enjoy the ability the recipes give us to kind of make them our own. Thanks for all you do and keep it up.

Great tip I got from my son. Push in the little tabs on the ends of the plastic wrap and foil boxes. It makes it so much easier to work with.

Looks 👀Delicious!! Here in South Dakota we call that, “Fried Pork Tenderloin”..lol And the thinner the better, even thinner than you made it. You’ll find them served here locally as sandwiches, on a bun, with ketchup, mustard, and pickles. They’re my favorite, when done right and cooked fresh.:) Great job guy’s!!

The tradition of breading and frying cutlets of meat comes from a couple different European countries, so the process naturally came over to the US with its immigrant population, but other countries also have adopted the method. Japan for instance calls this tonkatsu (ton=pork and katsu=cutlet).

As an Austrian, where the Wiener Schnitzel originates from, it always gives me a heart attack, when someone ruins a perfect crispy Schnitzel with any kind of Sauce.

As an Austrian, you should know that the Wiener Schnitzel is not made with Pork aka Schwein.... also, this is for a original Wiener Schnitzel FAR too thick. And to make it perfectly , you have to toss the hot Oil + butter-mix over the Schnitzel itself to create those bubbles. but thats just nonsense in my german perspective, ... i want it more like Sam did it ! ... thick and juicy and crispy and .. mhhmmm OMG.

Thank you so much for the recipe Sam. I made this for my wife today. She's originally from Germany. Last month her mother died in Dusseldorf. She took it really hard as I would expect anybody who lost her motherhood. So when I saw this recipe I thought maybe that I would try to Maybe give her a little taste of home cooking from her mother. I made only one change in the gravy and that was I added just a little bit of vermouth to it. She absolutely loves the recipe. Thank you again.

My grandmother was German, and growing up veal schnitzel was a staple. I haven't had veal or pork schnitzel for ages, think it's time to revisit it. Thanks for reminding me. We used to have it with a creamy mushroom sauce though. My mouth is watering just thinking about it!

Having grown up in Germany and actually planning trip back in April...I'm so looking forward to authentic german food. And schnitzel is at the top of my list....the best yet is at wolfgang pucks at Disney springs here in florida. Just a little bit of lemon and some warm potato salad....I'm clocking out and calling it a day

Schnitzel is usually served with lemon to squeeze over it. Jaegerschnitzel, or hunter's schnitzel, is served with the mushroom gravy on top.

Thank you Chance, the only thing missing from this beautiful schnitzel is copious amounts of freshly squeezed lemon juice. 🍋 It's a standard application. This style of cooking also works very well with chicken and beef. Again, that lemon 🍋 😘😘😘 It's soooo very delicious. This was so beautiful to see you cook. 👍🤗
