ACHARI BIRYANI WRITTEN RECIPE :
Ingredients for Biryani :
Oil 1 cup
Brown onion 1 cup
Chicken 1 kg 16 pcs
Salt 1 tsp
Ginger garlic paste 2 tbsp
Green chili pastes 1 tbsp
Chili powder 1 tbsp
Crushed red pepper 1 tsp
Prepared biryani masala 2 tbsp + 3 tsp for later use
Achar gosht masala 1 tbsp
Crushed mango pickle 3 tbsp
Green chilies 8
Ingredients for Biryani Masala :
Coriander seeds 1 tbsp
Fennel seeds 1 tbsp
Cumin seeds 1 tbsp
Black cumin 1 tsp
Cloves 6
Whole black pepper 1 tsp
Green cardamom 6
Whole Black cardamom 2
Mace powder ½ tsp
Nutmeg powder ½ tsp
Star anis 1
METHOD :
Grind together all the ingredients for biryani masala into fine powder.
Ingredients for Yogurt Paste :
Yogurt 1 cup
Orange color ¼ tsp
Screw pine few drops
Ingredients for Rice :
Basmati rice 750 gm soaked and boiled with salt and whole spices
Chopped coriander and mint leaves as required
Leftover biryani masala 3 tsp
Reserved oil from chicken masala
Orange food color dissolved with kewra water
METHOD :
Grind together biryani masala into fine powder, boil rice with salt and whole spices till ¾ done, mix food color with yogurt and kewra essence and keep aside. Heat oil, fry onions till light golden, add chicken, fry for 10 mins, add ginger garlic, green chili paste, continue to fry for few more mins, add chili powder, crushed red pepper, biryani masala, achar goshtmasala, salt, fry with ½ cup water, add in yogurt mixed with food color to the chicken, fry for 10 mins, add in green chilies, cover and cook for 10 mins till chicken tender. Remove the lid, and carefully remove the oil from the surface of chicken masala, spread some chopped coriander and mint leaves over the chicken, spread all of the cooked rice over the chicken, sprinkle leftover biryani masala over the rice, drizzle some oil and leftover chicken masala oil on rice, sprinkle chopped coriander and mint leaves, finally drizzle some food color, cover with a thick cloth and place the lid over it, leave it on dum for 20 mins on low flame. Serve hot.
KAIRI KA LATTO WRITTEN RECIPE :
Ingredients :
Raw mangoes 2
Onion dip in cold water 2 sliced
Roasted gram flour 2 tsp
Salt ½ tsp
Brown onion 2 tbsp
Coriander leaves chopped 2-3 tbsp
Crushed red pepper ½ tsp
Oil 2 tbsp
Chopped garlic 1 tbsp
Sesame seeds 1 tsp
METHOD :
In a bowl mix together grated kairi, onions, roasted gram flour, salt, brown onion, coriander leaves, crushed red pepper, mix all well. Heat oil, fry chopped garlic till golden, add sesame seeds, add to salad, mix and serve.
