Achari Gosht is a spicy and tangy Indian mutton dish flavored with pickling spices. Here's a basic recipe to get you started:
Ingredients
- 500g mutton (cut into pieces)
- 3 tablespoons mustard oil
- 1 tablespoon ginger-garlic paste
- 2-3 green chilies (slit)
- Salt to taste
- Fresh coriander leaves (for garnish)
For the Achari Masala
- 1 teaspoon fennel seeds
- 1 teaspoon mustard seeds
- 1 teaspoon nigella seeds (kalonji)
- 1 teaspoon fenugreek seeds
- 1 teaspoon cumin seeds
- 1 teaspoon dry red chilies
Instructions
1. *Dry Roast the Spices*: In a pan, dry roast the fennel seeds, mustard seeds, nigella seeds, fenugreek seeds, cumin seeds, and dry red chilies until fragrant. Allow them to cool, then grind them into a coarse powder. This is your achari masala.
2. *Cook the Mutton*:
- Heat mustard oil in a large pan or pressure cooker.
- Add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.
- Add the mutton pieces and cook on high heat until the mutton is browned on all sides.
- Add the chopped tomatoes and cook until they soften and blend with the mutton.
- Add the prepared achari masala and mix well.
- Lower the heat and add the beaten yogurt. Stir continuously to avoid curdling.
- Season with salt and add a little water if needed. If using a pressure cooker, cook for 4-5 whistles until the mutton is tender. If using a regular pan, cover and cook until the mutton is tender, stirring occasionally and adding water as needed.
3. *Garnish and Serve*:
- Once the mutton is cooked and the gravy is thickened, garnish with fresh coriander leaves.
- Serve hot with rice, naan, or roti.
