||Lemon-Lavender Tart recipe||
For the Shortbread crust:
-1/2 lb unsalted butter, room temperature
-1/2 cup granulated sugar
-1 1/2 tsp vanilla extract
-2 cups all-purpose or gluten-free flour (I chose Bob's Red Mill 1-to-1)
-1/4 tsp salt
- Can add 1-2 tsp of Crushed Organic Culinary Lavender if you would like an extra lavender kick
Press dough into 2 cake tins or square pans, lined with parchment covering all sides
Bake at 350F for 20 minutes until edges are very lightly golden brown
For the lemon filling:
-7 large eggs, room temperature
-3 cups granulated sugar
-2 Tbsp lemon zest (from 4 to 5 lemons, avoiding the bitter white pith)
-1 cup lemon juice, freshly squeezed (from around 5 lemons)
-1 cup all-purpose or Bob's red mill gluten-free 1-to-1 flour
-Can add 1 tsp of crushed lavender, infused into a bit of lemon juice for a gentle lavender flavour
-Add filling to baked crusts
Bake at 350F for 35-45 minutes, until the edges are solid but the centre wobbles slightly (If you find the filling is not solid enough but the top is browning too much, tent some tin foil over top for the last 10 minutes or so)
Let cool 1 hour at room temperature
Refrigerate minimum 2 hours, or overnight
Top with confectioner/icing sugar and, optionally, a gentle sprinkle of lavender petals
I also think it is highly likely that this recipe would be delicious if eaten while frozen, but I have not tried it this way :)
