Ep. 2 of the show is called "toil and trouble." In Macbeth, the three witches chant "double, double, toil and trouble, fire burn and cauldron bubble." They promise him the kingdom and they assure him that "no man of woman born" will ever harm him, and he is eventually defeated by one who was not "born" but "ripped" from his mother's womb through C-section. Maybe the night sisters promise Thrawn that he will not be defeated by a Jedi only to be bested by Ahsoka who "is no Jedi".

I've seen a few comments that Thrawns should know about Ahsoka because of time spent with Anakin/Vader, but I don't think that's necessarily the case. Anakin didn't bring Ahsoka with him, and he didn't overly trust Thrawn, so he likely wouldn't have opened up about his Padawan to him. And Vader would never discuss her let alone Anakin. So it's quite likely he has no knowledge of her.
