INGREDIENTS
In a saucepan (syrup):
- Cherries 80 g. (any fruit and berry puree)
- Water 50g.
- Erythritol 100 gr.
- Agar-agar 7 g (if agar force 900, then 5 g, but if bought in a regular supermarket and not sure about the quality, it is better 10 g).
In a bowl:
- 1 egg white.
- Citric acid (1 pinch)
- Xanthan gum 1/3 tsp.
- Flavoring (optional)
⚠️ In this recipe, it is very IMPORTANT that the whipped egg white and the syrup don't stand (the egg white doesn't settle and the syrup doesn't cool). You have to try to cook them almost simultaneously.
It is also important that the ready marshmallow mass does not stand for a long time, because agar-agar sets very quickly, so you have to do everything quickly, without distraction, then you will get it all!
