Ajapsandali is a flavorous dish made with eggplants, tomatoes and bell peppers. The process of cooking is unusual as all the vegetables are first stewed separately, then combined and stewed together garnished with spices, garlic and fresh herbs. It is this moment that a real cooking magic happens. Ajapsandali is the gentlest vegetable stew in which a particular taste of each vegetable creates wonderfully a real cooking masterpiece!

Ingredients:
• eggplants - 1 kg
• carrot - 500 g
• bell peppers - 500 g
• chilli peppers - 1
• bulb onion - 250 g
• garlic - 6 cloves
• tomatoes - 700 g
• basil - 10 g
• cilantro - 30 g
• parsley - 10 g
• utscho-suneli - ½ tsp
• saffron - ½ tsp
• ground black pepper - ½ tsp
• ground coriander - ½ tsp
• coarse salt - ½ tsp
• salt - 3 tbsp
• vegetable oil - 80 ml
Preparation:
1. Cut the eggplants into the half rings 7-8 mm thick, sprinkle with 3 tbsp of salt and mix well. Leave for 30 minutes. In 30 minutes wash the eggplants under running water to remove the salt and squeeze out well.
2. Heat 60 ml of vegetable oil in the pan, lay the eggplants and fry them until readiness for about 15 minutes. The eggplants should be soft but not turn to mush.
3. Cut the bell peppers into bars and fry over medium heat for about 10-15 minutes until readiness, add the oil into the pan if needed. The peppers have to be soft and save the shape.
4. Dice the onion, cut the carrot into the slices 5 mm thick. Fry the onion for 3 minutes and add the carrot, then cover the lid and stew for 20 minutes approx. The carrot should be soft still keeping its shape.
5. Chop up parsley, basil and cilantro.
6. Crush the garlic in a mortar, add cilantro and 1 tsp of coarse salt, mix well until smooth paste.
7. Peel off the tomatoes and grate them coarsely.
8. Put the fried eggplants, peppers, onion with carrot, saffron, parsley, basil and grated tomatoes into a large heavy-bottomed pot, mix well. Stew the veggies for 15 minutes over low heat.
9. Add the paste of garlic and cilantro, mix up. Ajapsandali is ready. Enjoy!
