It is likely just like regular pesto; into a food processor put fresh basil leaves, nuts, garlic, then drizzle in olive oil, slowly, then add finely grated parm.

I have a kiddo with a nut allergy (like she is allergic to three different nuts, one cashiews is her worse), alot of store baught pesto now have cashiews instead of pine nuts. It's not to expensive and you can substitute to your hearts desire.

The way Italians (me) make Alfredo is butter fresh grated cheese and pasta water. You make the pasta first then in a saute pan add pasta then the cheese , butter , pasta water and keep layering it until desired creaminess.

The cream cheese is brilliant because it costs so much less than the parm, and is less salty. Not to mention it enhances the natural tang of the cheese, and the creaminess. I think I'll try try this with tomato pesto. 😋

as a Sicilian-American it is SACRALIDGE to use cream cheese...Alfredo is butter, pasta water and Parmaggiano Reggiano...even if you use the stuff in the green container it's better than adding cream cheese which is a lazy way to make alfredo! If you need to have a creamy Alfredo again all you need is butter, pasta water, half and half or milk or heavy cream until just under a boil then add shredded parmesan, NOT THE GREEN CAN, and there is creamy Alfredo without the cream cheese...I don't get it, it's absolutely never needed, Olive Garden ruined Alfredo and now America believes it's made with cream cheese. It's not.

That looks delicious. I use European butter. I actually use Irish butter. They have butter from all parts of Europe, but the one I have is specifically an Irish brand it’s an Irish brand of butter I got my Irish butter from my grandma my grandma swears that Irish butter is the best. I agree. I told my mom I’m no longer buying any other brands of butter except for this Irish brand I started buying my grandma bought for me.

Idk this is pretty good, probably the best for Alfredo definitely. While not traditional Italian, I’d argue this Alfredo is taking a lot from cacio e pepe and a unique pesto (pine nuts are expensive y’all). The cooking style incorporates more traditional technique then just opening a can of Alfredo sauce or just making Italian Mac and Cheese.

I won Best of Show at a local Harvest Fair (and got a brief newspaper article about it) for making spicy Thai cashew nut pesto sauce. If I make this I am using that sauce. The alfredo will dilute the spices (its not painful at all for most people) so even people who are very sensitive to spice should be able to enjoy it.

Butter 🧈, fettuccine and parmegiano cheese. cook butter 🧈 into pan then add fettuccine pasta and add parmegiano cheese 🧀 then pasta water add cheese again and pasta water then your Pasta Alfredo is done.

Secret: all you need is the butter, garlic, cream cheese and parmessan. The cream is in the cheese. Add pasta water as needed. Lots of pepper

Secret ITALIANS use butter and parmasean...thats it. when you put in the wet pasta, and stir, it forms an emulsion with the butter and cheese and THAT is what makes the alfredo sauce

Ok, can anyone tell me how to keep my Alfredo sauce from getting all dry and clumpy in the fridge? When I order it from a restaurant it’s still creamy when I heat up leftovers, but when I make it at home it gets all congealed and icky looking. I love Alfredo but I’m disappointed every time. Is it because I usually use milk and thicken with cornstarch? (I don’t often have heavy cream on hand).

Just to be clear, there is no way that just that amount of Parmesan alone is going to provide nearly enough seasoning for all of that pasta and cream. Having Parmesan in a recipe does not absolve one from also adding salt.

eh my grandma used to buy a big block of parm cheese and serve the noodles straight off the block the heat and some noodle water helps melt the cheese traditionally that is how you make alfredo sauce its just cheese and water

one surprise I add, it's like 1 drop of apple cider vinegar. I know that sounds weird, but it works. And it really takes almost nothing to make the difference. I would almost put it in a spritz bottle and give it half of a squeeze just to spread the vinegar over the dish.
