All purpose dough recipe:
Flour:400 g
Water:240 g (60%)
Yeast:4 g (1%)
Salt:2 g (0.5%)
Sugar 15 g (4%)
Oil or fat:15 g (4%)
Salt and sugar are optional. In baked goods, you can add more oil/fat. In boiled food, for example noodles, omit the oil. Other recipes, oil is optional.
