🍉Watermelon peel marmalade
500 g (17.6 oz) watermelon rinds (peeled)
600 ml (20 fl.oz) water
5 g (0.2 oz) soda
500-600 g sugar (17.6 oz)
50 ml lemon juice (1.7 fl.oz)
zest of one lemon
🍉 Make the marmalade.
1. Cut the watermelon rinds into 1 cm wide sticks.
2. Add baking soda, cover with water and leave to soak in syrup for 5-6 hours.
3. Rinse the crusts with water, transfer to a saucepan, cover with water.
4. Add 300 g (10.5 oz) sugar, lemon juice and zest.
5. Bring to a boil, after boiling, simmer over low heat for 20-25 minutes.
6. Remove from heat, leave for 12 hours.
7. Add half of the remaining sugar, put on fire, bring to a boil, boil over low heat for another 15-20 minutes.
8. Remove from heat, let it brew for 5-6 hours.
9. Add the remaining sugar and put the crusts back on medium heat for 20-25 minutes.
10. Remove from heat and leave for 5-6 hours.
11. Fold the crusts on a sieve, then place on a wire rack and leave for 5 hours to dry the marmalade.
12. Roll the finished marmalade in fine sugar if desired.
