I finally made this fried rice. And let me tell you. It was a BIG HIT! I made enough to feed an army i thought. We are all FULL FIGURED adults and it fed 5 of us once. AND 3 of them 2 more meals. My only problem is i just have a 17 inch blackstone i cant afford a 36 inch and when you cook 9 cups of cooked rice you have to cook in shifts. But i just wanted to thank you guys for putting out these videos cause it has made me look like a MASTER CHEF. KEEP UP THE GREEAT WORK!! Cause i need more AWESOME RECIPES!!

From an Asian pov, this is a good fried rice recipe! Nice! Also, just a tip for you: caramelize your soy sauce on the flat top for a few seconds, and put your chicken on it. This adds a smoky flavor to it because soy sauce actually have really small amount of alcohol in it. Do the same for your veggies and your rice, and it elevates your smoky flavor to it. I tried this on just chicken in a stove, and I added my soy sauce first and the smokiness and caramelization of it, put my dish to a whole different level!

@@waltwins yeah. Did you know that Chinese cooks actually pour the soy sauce at the side of the wok instead because they also wanted the same effect! Also, add a little oil on your rice before it goes on the fridge. This way, when you cook the fried rice the next day, you won’t have a lot of clumps. Hope you tell me how it goes for you!

I do various fried rice, pork, seafood, shrimp on the Blackstone. I also do chow mein noodles instead of rice and it's fantastic! It's pretty similar to doing fried rice, but use chow mein noodles instead. However, when you boil the noodles, just slightly undercook them. I only cook my noodles for 1 and a half minutes. Then toss them with a little oil so they don't stick together. One suggestion, instead of breaking eggs on the side wall of the griddle when making Asian food, just hold one of the flippers sideways on the griddle and crack the eggs on that. Keeps the eggs from running down the outside of the griddle.

awesome video guys. I learned my fried rice from the Micronesian fellas at the places typically called Shogun, and this is ALL wrong. that grill is just not even close to hot enough to glaze that rice the way you need to. that rice is wet and steamy because it is not rapidly evaporating the water fast enough. I recently got a Masterbuilt 800 and It puts the blackstone to shame when using the griddle, I have no idea how the physics work but the direct propane flame on my Blackstone, does NOT keep the surface as hot as the Masterbuilt. I perfected that rice after begging the guys at Shogun to tell me some secrets. They told me everything except the liquid they squirt on the rice (which i stumbled upon accidentally), and I can tell you the way you guys are making it is not right. If the grill is properly hot (450+ sustained Fahrenheit) , then the rice will burn in about 60 seconds if left unmoved. IT will have a gorgeous tasty glaze to it. Maybe yall are going for just a normal Chicken fried rice, or benihana style, but the style I make requires way more heat. Peace!

great recipe and cooking, I just couldn't help but cringe a little watching Bret crack the eggs on the side of the griddle 😬making a semi permanent stain and getting shell in the food. try cracking eggs on a flat surface for less shell and cleanup lol

Nice recipe. Similar to my own. I just got the 48” griddle and I was looking to see how the process differed from wok based fried rice. All makes perfect sense now so thank you. I already did a Korean BBQ with it and Fried Rice is next. So my recipe is different in that I don’t use sesame oil or sesame seeds, even though I love them both. I probably use double the onion and some scallions, a combination of sweet soy or black soy and then some regular soy, some minced ginger. The only thing you omit from your recipe that I couldn’t do without is a tablespoon of Sherry per two cups of cooked rice. Huge difference maker for me. Thanks for the video!

@waltwins
2 жыл бұрын
Thank you so much for watching! This was one of our earlier cooks, before we really started sharing temps. I can tell you we cooked the rice on med/low setting, as well as the veggies. Once the veggies were cooked, we pulled them to the side and turned that burner low and then off (to keep them warm but to not actively be cooking). I hope this makes sense! We were temping at approx. 420-440 (per experience with med/low setting on the right side). 🤙🤙

With technology it would be nice to include the recipe at the beginning and then print the ingredients across the bottom as they are being used. I was ready to try this recipe although with the addition of garlic and bacon but needed to get sweet soy sauce and sesame oil. 20 minute trip into town.

Seems like a lot of cross contamination from raw chicken utensils to cooked food. Just my opinion though.
@waltwins
3 жыл бұрын
Thank you so much for watching, we are dealing with really high heat, much the same as is used in any Hibachi/Teppanyaki restaurant. Consider the amount of time the food is cooking through with the spatulas being right on the heat, the food is adequately cooked through, and the cooking utensils have ample time to burn off any contamination. Take care.🤙🤙

I just made this on my brand new Blackstone 36inch griddle...it was first thing I cooked on it. I seasoned it 3 times within an hour with canola oil. I turned all 4 burners on medium...let it heat up for 5-8 minutes and then threw my rice/lo mein/ chicken/ veggies all on and it seemed everything stuck. What did I do wrong? Should all the burners not be turned on? Should I have put certain things on different times? It was my first cook, and first time cooking on Blackstone but want to fix everything sticking. I believe maybe it was cause all the burners were on :/ idk
