These buns are:
-GLUTEN FREE
-LACTOSE FREE
OPTIONAL EGG-FREE (VEGAN)
YOU WILL NEED:
60 g buckwheat flour
210 g corn starch
30 g potato starch
6 g psyllium husk
20 g sugar
6 g salt
3 g dry yeast
50 g egg
150 g boiled potato
180-200 g water
30 g oil
9 g xanthan gum
Egg for brushing
Sesame seeds
(*) depending on the moisture content of the potato you may need to add more water.
👉POSSIBLE SUBSTITUTIONS:
✔️La buckwheat flour, for any other gluten-free cereal or pseudocereal flour: rice, teff....
✔️El potato starch for tapioca starch.
✔️El egg for the same amount of aquafaba.
✔️El sugar: if you cannot consume sugar, simply eliminate it. Sugar adds colour to the crust and fluffiness to the dough, but it is not essential.
