Honesty, I thought the pre grilling before the sous vide would totally wreck the structure of the meat. But it looks like you have enhanced the flavor of the crust, and this is a big revelation. I am impressed!

That is true art! You can sere on high heat with your egg if you're able to find the right charcoal and it's not to humid outside. I've pegged 750 multiple times and my buddy with an after market thermometer has gotten his to 925. Try wicked good charcoal jakes blend.

Tomahawks are fun to make, but I normally just season mine and sous vide it first without a pre-sear and definitely without any added fat or butter in the initial water bath process or it seems to get a weird texture. But after it is cooked I sear it really fast and hot. Just try it as an experiment sometime and you will see what I mean.

Looks great and I'm sure it tastes delicious. Just wondering though, if searing the meat is meant to create the crust, what's the point of doing it before sous vide since the juices expelled during the sous vide process will ruin the crust anyway? Wouldn't it make sense to just sous vide first and finish with the sear? Is it just to double up on the color?

Ah, yeah that makes sense. Might have to give it a go this weekend. Do you think a similar approach would work with a reverse sear? Quick sear first to amp the flavor, low temp in the oven to bring it up, then a hot sear to finish

Not to sound like a sous vide snob :-) but I'm not sure it would. perhaps let the steak rest over night in the frige? the sous vide process in the recipe not only is cooking the steak, but also acting as a marinade of sorts... But hey, we only learn from experiments, so if you are up for it, give your idea a try and let me know how it goes, I'm interested to see! thanks for the comments, this will be good to learn how you idea turns out ! cheers !

Haha, not snobbish at all! It makes sense. Since it's sitting in an air tight environment and coming to temp at a very slow rate, the flavors have a chance to really penetrate the meat. I think pertaining to a reverse sear in the oven/cast iron skillet, a good advanced seasoning of salt at least few hours before to create a dry brine works really well. I appreciate you replying, I'm sure your other viewers do as well!

I use 4 mil bags with my Vacmaster, and they are very tough. Have even vac'd bones alone to use later for stew. I agree with the double sear. Adds so much more flavor! Thank you for your vid.

if I were only grilling it, you would be absolutely right... I do it cold so that the first grilling bring it up to temp in the center so that the carry over doesnt take me past my internal target temp of 120ish.

Looks great, I like the double sear, but from everything I have read and my own experience putting butter in while you sous vide a steak actually dilutes the nice beef flavor, I use butter for the post sear, try it!

Yes butter pulls out some of the fat soluble flavour compounds I wouldn't recommend it for sous vide, only for searing and post sear

you can cook anything to a specific temp, and never over cook it... so if you like your steak a perfect 122 degrees rare, it will never cook beyond rare. My buddy did a brisket @ 135 degrees for 48 hours and was pull apart perfect and it was only medium, not 200 degrees. its a door opener for sure !
