It's hammed up for the American shows. When filming Kitchen Nightmares if you compare his UK ones to his US ones you can see how different they are. The UK ones focused more on solving the problems, getting the chefs to cook better or clean more or whatever was needed, and they generally succeeded. The American ones focused more on what was wrong, getting Gordon to throw up or make comments about the bad food or the mould in the store or whatever, and on the owners refusing to co-operate and being belligerent.

They eat for free during the filming of the season. Gordon sometimes shuts the whole kitchen down when the teams is not performing and sends everyone home. The rest of the time i think the restaurant runs like a normal restaurant and you do have to pay.

Honestly mate, give his biography a go (I listened to the audiobook because he narrates it) and you'll have a whole other outlook on Ramsey. He documents how this show came about and his thoughts going into it, it's a great read or listen

I really recommend UK Kitchen Nightmares, reaction or not. Ramsey is genuinely trying to help and you see more of the real side of him. Most of this is voiceovers with edited camerawork.

I have to say in defence of the last lady "I thought cold water boils faster than hot water" There is a Phenomena where warm water will freeze faster than cold water to make ice, it sounds bizarre, but it is a thing :)

You should watch his early UK shows. In the British version of Hell's Kitchen (on ITV), and his other early British shows ("Ramsey's Kitchen Nightmares" and "The F Word", both on Channel 4), he gets off-the-wall angry. The thing is, though, you can tell that he's shocking the staff into life with it because he cares deeply about how people should prepare food and how restaurants should work.

I think it’s less about getting the expected level of service from a free meal, more that customers were coming to the kitchen and bothering busy staff, when it isn’t their job to take requests from or even deal with customers.

Hilariously, Gordon is about 4 foot tall, not the 6'2" he claims on the Internet. Look how you rarely see his feet and how his co stars are diminutive. He even sets up his stall so he can stand on a curb at one point.

All head chef's are assholes they have to be. Michelin stars don't just fall from the sky's it takes decades of training hard work and experience to get there and one high profile critic being served a substandard meal can ruin them. When they open their first restaurant they're representing the chef who trained them and once they become established they pass their legacy on to all the chef's they train. Their restaurant represents millions in funding and all their hopes and dreams and it can all go up in smoke if they take their eye off the ball. Once they've built a good reputation and a solid team they can calm down but new people entering that environment need to keep up or get out because anything less than perfection is crap.
