Truffles are a culinary delicacy, made famous by the Italian and French, these underground fungi also grow in the Northwest region of North America. The odor is described as garlicky, cheesy, umami, mushroomy, and even having hints of solvent. People pay big money to have them shaved over their favorite decadent foods, adding powerful flavor and a touch of class.
These fungi, like their European counterparts, are usually hunted by dogs. These dogs have been carefully trained to sniff out the scent emanating from the soil below trees. These fungi grow in an association with trees, a relationship known as mycorrhizae. Without the trees, the truffles wont grow, and without the dogs, the ripe ones are hard to find.
Every February near Eugene Oregon the North American Truffle Festival takes place, a month long celebration consisting of several events- and one of them is known as the Joriad Truffle Dog Competition. Named for the jory soil in the region, the truffles grow in clay type soil that is common in this wine-grape growing region of the world. The range of the Oregon white and black truffles is from Northern California, to southwest British Columbia, and west to the Cascade mountains.
