Beef pares is an all time Filipino favorite street food paired with garlic fried rice and beef soup. I used beef brisket in this recipe, simmered it for an hours until it was tender. Enjoy this power trio and i hope you give it a try!
INGREDIENTS:
PARES SOUP:
-1/2 kg beef bones ( buto-buto ng baka )
- 1 tsp whole peppercorn
- 1 medium size onion, peeled and cut in half
- 1 medium size carrots
-1 beef cube
- salt to taste
- onion leaves
BEEF PARES:
- 1 kg beef ( brisket )
- 3 cloves garlic, peeled and crushed
- 1 large onion, chopped thinly
- 3 tbsp soy sauce
- 3 tbsp dark soy sauce
- 2 tsp hoisin sauce
- 1 thinly slice ginger
- 2 pieces star anis
- ground block pepper to taste
- 4 1/2 cup water ( add more water if necessary until the beef turns
tender )
- 1 beef cube
- 1/4 cup sugar
SLURRY ( PAMPALAPOT NG SAUCE )
- 1/4 cup water
- 1 1/2 tbsp cornstarch
PARES FRIED RICE
- 1 head garlic, minced
- 1 egg
- 4 cups left-over rice, cold
- garlic powder
- salt to taste
GARNISHING:
- toasted garlic
- green onion or scallion
