LUGAW TOKWA'T BABOY RECIPE
Serving: Good for 8-10 person
INGREDIENTS:
- 420g pork mask ( maskara ng baboy )
- 300g pork ears ( tenga ng baboy )
- 1 tablespoon salt
- 1 teaspoon whole peppercorn
- 1 medium size onion, cut in half
- 1-2 blocks firm tofu, sliced
- 1 head garlic, peeled and crushed
- 1 thumb size ginger, strips
- 1 medium size onion, chopped
- 1 cup rice, rinsed and soaked in water for 30 minutes
- 1/2 cup glutinous rice ( malagkit na bigas ), rinsed and soaked in water for 30minutes
- 4 cups pork broth
- 5 cups hot water ( add more if necessary )
- 2 pork bouillon cubes or chicken bouillon cubes
- salt and pepper to taste
Dipping Sauce:
- 1 large size onion, chopped
- 1/4 cup vinegar
- 6 tablespoon soysauce
- 2 tablespoons brown sugar
- 1/4 cup water
- 2 red chilli, ( add more if you want more spicy dipping sauce)
Garnishing and Topping:
- toasted garlic
- onion leaves
- hard boiled eggs
