this guy has an AMAZING cooking channel and his hard work is gonna pay off his content is binge-worthy just enough personality to be entertaining but not enough to be distracting....its an amazing balance no pretentious self-importance, no arguments from authority....accidents included, very relatable i haven't made a single one of these recipes, but i have learned how to properly sear, use butter in pil so it doesn't separate and how to deglase a pan and just some of these basics have dramatically improved my cooking im about to wok up some moogoo gaipan and some fried rice 🥳 but imma be listening to Mitch while i do it

your videos are my favorite thing on youtube right now. Bourdain to me has always been an inspiration, I think his whole life really shows that you don't have to be some uber professional supersoldier to be great at something like cooking, you can just be a regular schmuck and still make food fit for a king. I used to work for Neil Stein at Fishmarket 79-83 and we would serve fried smelt in season and shad roe with bacon in it's season. I learned a lot working for Neil. It was hard to do before the internet.

So great! As a kid, my grandma fried smelt at the local VFW. I remember the smell of cigarettes, cheap beer and fried fish. I sat on a little bench near her in the kitchen and ate these like French fries. I remember eating so many one evening that I got sick from them 😮. Thanks for the video!

This is my favourite dish when I'm in Greece. It’s called gavros there. With tzatziki and a greek salad - maybe som french fries if I'm really hungry. It’s often not on the menu because they don't think tourist will want them. But you can ask for them if you are there in the fall. They shouldn't smell of fish though if they are really fresh.

My go-to for oil spills is to dump a bunch of salt on the area. The salt soaks up the oil, and then you just have to wipe the salt away. Easy cleanup! Great vid, they look delish!

I'm always super happy when I see that you have a new video. Legit even though I probably spend three hours a day on KZitem your channel is one of four that I actually do the bell notification for. I also wanted to say please, please, please be careful with frying in oil. I know you are an entire adult human being and don't need/want the advice of some stranger on the internet but oil fires or burns can get really bad really quickly. Just use a giant pot, plus then less oil needs to be cleaned up after....you'll never get it all but at least less. Anyway, I hope you're doing as well as you can and loved the two party quip at the beginning, I completely agree. Take care.

Try some Asian foods on your time off. It gets addicting. Chinese, Korean, Vietnamese, Cambodian you name it. Oh , and heads would have to roll before I made these.😂

There used to be a vendor at Smorgasburg called Bon Chovie. They served fried anchovies. You could get them the usual way, or you could order them “Jersey style”, which meant with the heads on. I’m pretty sure that Tony would’ve ordered them Jersey style.

That's a very common food in Spain, especially in the South around Malaga and Marbella. You can use different kinds of fish, small sardines and anchovies are common and what I usually pick. You can use regular size sardines but in this case you should fillet them they're great this way. You can use regular flour but hard wheat flour gives a better result. The head sometimes tastes bitter so don't be afraid to leave them along the tails it's ok.

Hey man I love the video as per usual A pro tip for oil spills in the kitchen is to spread table or kosher salt over the affected area. It'll do a lot to soak up the bulk of the oil. Scoop that oily salt up and then you go to town w your regular soap/sanitizer stuff

when i fry things, i like to use "self-rising" flour it's essentially flour with baking soda in it gas gets released from the baking soda and it makes the fried crust way flakier, and its what commercial kitchens do to make a thicker crust not sure it is appropriate for fancy schmancy stuff like this

Hey Mitch, sometime you should take a trip to Atlanta with the specific goal of spending a few hundred dollars on spices and other chef’s pantry essentials, at the Dekalb Farmers Market there.We do this about every 2 years. When we were there in July we met a chef who was there to shop all the way from El Paso because he said many of the things there were cheaper than his restaurant suppliers could get him. So proud of you, keep going, one day you’re going to take this to the next level and we’ll be seeing you on basic cable with a bigger budget.

Hey there, thanks for the comment. It depends on the circumstance, but I like to use gloves as it's easier to remove them and quickly move my camera gear around. Just a preference.
