Hetal and Anuja,For your Information: In kerala, toddy is not made out of coconut water, but it is tapped out of coconut flower bunches at the early stage from Coconut tree itself. Toddy is much better than fermented coconut water. Try it when you visit kerala.

Thanks for the recipe. We don't have the Raw Ponni Rice, can we use any rice or even Water grind Rice flour made in Thailand ? We have Appam here too but the Chinese way ! Yes, it is crispy and the center is not so thick but it is sweet. I love the way you add warm water and sugar to the yeast to let them bubble as many times if the Yeast is dead, no point to continue as wasting time and all the effects and ingredients. I love to eat Naan, do you have the recipe, I got some -- I have tried but not good from others but I trust you two !

Rebecca easy way to make appam what you can do buy roasted white rice flour or called appam flour, coconut milk can and coconut water and yeast and salt. mixed the rice flour with coconut water and coconut milk and yeast. leave it for over night. The next day before make the appam add some more coconut milk and salt. please try it you will like it. you can eat with coconut chtuney or any curries. if u want sweet put some milk and sugar middle of the appam . also you can put egg and make the appam.

I make a traditional dosa batter and add a bit of sourdough starter so it triples in volume overnight. To make appams with it I thin it with coconut milk to the right consistency and add a bit of jaggery. Do you think I'm getting an authentic tasting appam with this combination?

dosa batter and appam batter are different. dosa - rice and black dhal; appam is rice, cooked rice, coconut, - the jaggery would change the original taste

The Appam, IdiyAppam, Unni appam, Ethakka Appam, NeyyAppam all are beautiful cuisines native to Kerala dear goddess. Kerala and Sri Lanka had trade relation. We all were one before the British ruined us. We all cook international foods. People in Kerala also do it. It is just cooking dear. What's wrong in an Indian cooking or copying a Italian dish? and the same rule applies for a Sri Lankan cooking Appam or what ever the Sri Lankan loves to eat. Above all Love knows no boundaries. :)

You can leave it for longer time when you use baker's yeast as it will grow, just add a couple of teaspoons of sugar to the batter to feed the yeast.
