Brilliant teacher Mr. Paul, you certaily make this seem so easy and simple! Thanks for the baking powder tip, I'll ceartinly give it a try next time I make this. When stewing the apples, or any other fruit I find that adding a tiny pinch of salt does contribute to bring out the flavour.

We've been in lock down here in Melbourne for almost 7 months with a bit of a break in the middle. Believe it or not, it has actually been quite easy if you set your mind to it, but cooking at home is now a big thing and my Geordie son in law loves your type of recipes. Much appreciated. I've got all the ingredients in my pantry except the cider. Can I use something else? But I do plan to try it when I get some - sounds good.

Lovely looking crumble Mr. Paul. I used to make lots of different fruit crumbles. Haven’t really made any desserts for a long time now. Watching your videos though has made me want to start making things again. A lot of my recipes I converted to make enough for 40 people as I was cooking for 40 men so I’ll have to learn how to make smaller amounts again. I’d like to see a video from you for Eccles cakes if possible. I haven’t seen one in amongst your videos so I’d appreciate it if you get a chance to do one. Have a great week Mr. Paul. YAY, for once someone making the crumble I grew up with though the recipe I used didn’t add baking powder and I’ve not seen the addition of a bit of water, I will definitely try that but the main thing for me is that you stuck with the traditional flour, sugar and butter for the crumble mix, none of this adding nuts, seeds and oats that so many opt for these days. Also, apple, peach or stewed rhubarb crumble are my favourites. Thanks for the recipe 🐨

I'm please to hear from someone who thinks like me, NO nuts, oats, etc. and you're so right about the Rhubarb crumble, unfortunately difficult to get here in Spain because it was once banned because the goats ate it and died.

@@MrPaulsPantry oh, I had no idea it is poisonous to goats, I guess they must eat the leaves. It’s a shame to ban it outright given I’m sure goats don’t have access to most home gardens and you could fence out goats in the case of farming.

@@MaZEEZaM Firstly. it's not now illegal. however, here in Spain Goats have quite a lot of rights and even are allowed to go through people's gardens where the ancient laws still apply. By the way, Goats eat ANYTHING.

I use a fairly coarse fruity Demerara sugar (Tate & Lyle I think) from CostCo and it adds to the crunch of the crumble. I also very lightly dust the raw fruit on each layer with it in the oven dish since I don’t use the pan pre-cooking method. Since I make a crumble in a large Pyrex glass dish (the type suitable for pasta bake and lasagne) I slice my apples unpeeled but cored into the dish, dust with cinnamon and Demerara sugar (and rarely nutmeg) then add some sultana, add the next layer, rinse, repeat. I try to make each layer fairly compact so that when I’m at the top it’s fairly level and not too much crumble sinks into the gaps. I think the addition of the water in this video will help with that in future. I’m one of those weirdos who like my crumble to be Apple, pear and sultana (if rhubarb is available I’ll add that instead of the pear) I also add oats to the crumble mix, substituting for some of the flour and then topping lightly but evenly with sliced almonds. My apples from my own trees are Grenadier, Bramley, Granny Smith, Red Devil and Falstaff. I’ve recently grafted Mary Jackson variety time a semi-dwarf rootstock so those will be available in about 4-5years time which I’m looking forward to. My pears from my own trees are Williams/Bartlett and Conference. Can you elaborate on what the baking soda does since I can only guess it’s to aerate the crumble lumps so they don’t turn to a biscuit like topping Also are there any substitutes for cornflour/cornstarch as a thickening agent?

Arrowroot, plain flour, guar gum, gelatine, agar agra all can be use as a thickening agent,

I was curious Mr Paul at the use of BP in the crumble, why would you want it; and what would not be ok about using SR flour? I have always done my crumble top with the sprinkle of water as it gives you the nice crumbly crumble. I think your recipes are unfussy and use everyday ingredients which is good for us would be bakers, and by the taste they show the old ways are best.

Hi, because in the bakery we never used self raising flour, always plain then we added the baking powder as required. sometimes you need more than is in the SR flour. Even now at home I never buy SR flour. Thanks for watching and for taking the time out to comment, I really do appreciate it.

I’m imagining this with copious amounts of clotted cream running over warm apple crumble. Can you get clotted cream in Spain or do you have a recipe how to make it? Here in Germany I haven’t found clotted cream anywhere so if you have a recipe that would be great. Thanks for the video and stay safe 🍀

Making clotted cream is not easy, I have tried it some years ago. The problem is getting hold of the raw milk to start with, you can't use pasturised milk or cream, and in some countries it's illegal to supply raw milk.
