For the stuffing:
apples 300 grams
sugar 1 tablespoon
Ground cinnamon 1/2 teaspoon
lemon zest 1
To serve:
icing sugar to taste
Beat the soft butter at room temperature with the whisk with the sugar, a pinch of salt and the vanillin until you obtain a creamy mixture, then add the eggs, one at a time.
Once that has been done, add the flour and baking powder; mix initially with the whips, then transfer to the work surface and mix until a smooth and homogeneous dough is obtained.
If necessary, add a sprinkling of flour.
Wrap in cling film and place in the fridge to harden for 1 hour.
In the meantime, put the peeled and diced apples in a pan, add the cinnamon, a spoonful of sugar and the grated rind of a lemon.
Cook over low heat for about 15 minutes, adding a little water if necessary.
Then transfer to a bowl and leave to cool completely.
After the pastry's resting time, roll it out on a floured surface bringing the thickness down to a few millimeters.
Cut the cookies with the help of a 6 centimeters round stencil.
Place about half a teaspoon of cooked apples in the center of half of each cookie and place another pastry disk on top of each one.
Seal the edges well by pressing with your fingers and trim the cookies again with the mold to give them a perfectly round shape.
Place the cookies onto a baking tray lined with parchment paper and cook them in a preheated static oven at 180 °C - 355 *F for about 15 minutes or, in any case, until lightly browned.
Take them out of the oven, let them cool completely and sprinkle with icing sugar before serving.
