A different version of the apple strudel, the Apfelstrudel, prepared with shortcrust pastry and served with Vanilla Sauce according to the South Tyrolean recipe. A perfect combination of textures and flavors that take this traditional dessert to another level.
Ingredients:
Shortcrust Pastry:
250 gr of all-purpose flour
100 gr of butter at room temperature
100 grams of sugar
1 teaspoon of baking powder
1 egg
grated zest of 1/2 lemon
For the filling:
500 gr of apples
50 grams of sugar
50 gr of breadcrumbs
30 gr of sultanas
20 grams of walnuts
1 Tbsp (15ml) Rum
The juice of half a lemon
1 tsp ground cinnamon
Vanilla cream:
250 ml of milk
50 ml of whipping cream
1 yolk
50 grams of sugar
5 g (1 heaped tsp) cornstarch
