Just racked this after 8 weeks fermenting. Now a autumn leaf colour and already quite clear. Had a little taste and a warming rich true apple flavour. Used 2/3 of sugar zo quite dry but perfect for me. Making more as soon as I can and looking forward to making others. Great instructions and easy. Thanks.

Love you brother and God bless your whole family.20 yrs ago I made rice and raisin wine. One bottle I misplaced for a few yrs and how mellow it was! I am probably going to use 1 or 2 recipes of yours and also try rosehips. Also I am going to buy a still.

Starting this off myself, I am a taff also but live in ingerland as they say here! I'm form the brecon beacons area so Eday is about the same wind wise!

Love your video and I totally agree - apple wine can be fantastic - though it really needs to age about a year to allow some of the malic acids in the apples to be transformed into lactic acid (a smoother acid). But .. your laundry bag has a metal zipper and that metal may break down given the alcohol and acidity and that break down may add unpleasant flavors to the wine. Here, in the US, you can buy paint straining bags and they are metal free.

Great tutorial! I just followed it to make some apple wine and am now waiting for the mixture to cool before I add the yeast :) I have a question though - how long after moving it to the demijohn should I leave it before moving it off the sediment? And how do I know when it's ready to bottle or be drank?

Hi, I have an small problem for taking the first hydrometer reading if for example I make a kind of wine that i put the fruit in a bucket and then add water and yeast. Lets say I am making apple wine, I cut the apples in small pieces and then add water, how could I know the actual sweetness of the apple if no apple juce was extracted. It would be extracted by the pectolase and yeast after they are done.

I started this recipe off last weekend. It would be helpful to see how you finish off the wines… do you stabilize? back sweeten? Do you carbonate or leave still? How about having a person or two do a tasting…

@@HappyHomestead The toffee apple wine is in the primary fermentation vessel as a 2 gallon batch. We added a big old batch of apples pushed through a corer and chopped, with a slightly higher quantity of just dark brown sugar and some pure apple juice. Fingers crossed and we'll let you know how it turns out. Thanks again and all the best. 👍🤞🍏🥂

The brown sugar brings out a great caramalized, toffee apple flavour. Great as a dessert wine for Samhain or bonfire night
