Anyone can talk wild exaggeration about coffee brewing, but with the April Brewer, you can simplify the process. First, you need good coffee beans and good water, which are the most important.
- Structure & Coffee-to-Water Ratio: I use the brewing structure recommended by April Coffee, using about 12-13 grams of coffee. The wide flat-bottom filter shape with a small amount of coffee ensures a flat and thin coffee bed. Pouring 100g twice ensures the coffee bed is evenly saturated, showcasing the best flavors of the coffee beans.
- Grind Size: My starting point is usually 25 clicks on the C40. If the result is too bitter and heavy, I grind coarser. Conversely, if it tastes too acidity, thin, or the flavor is boring, I grind finer. This usually has a noticeable effect.
- Water Temperature: For light roasts, I typically use 92-94 degrees. For medium-light roasts, I usually use 88 degrees.
- Total Time: The total time is around 2:30 to 3:00, but this is not strict. Sometimes it finishes in under 2:00 and still tastes great. Different beans have different flow rates, and you can adjust the grind size to influence the total contact time.
- Pouring: April proposes an interesting concept of dividing the 100g pour into circular and center pours, such as 30 circular, 70 center, or 40 circular, 60 center. A higher circular pour ratio extracts more, while a higher center pour ratio increases the flow rate.
My understanding is to consider these factors as a whole system that can be adjusted simultaneously. The key is to control whether to extract more or less, leaving the coffee beans to express their flavors. There’s no need to rely on complex brewing techniques to highlight specific flavors (although that can be fun sometimes).
