it's an employees thing, they probably were trained to weigh it out, but then over time stopped doing so and just rough measure it. But they never go back and retrain themselves to know how much that 4 ounces is, cause complacency is a hell of a thing.

When I worked at Subway we had measuring scoops for loose meat so portions were always right. I'm surprised Chipotle doesn't do the same thing. I think Subway was catching lawsuits about incorrect portions early 2010s.

Our manager at zaxbys would yell at us because we wouldnt weigh the frys. We all grabed a handfull of frys and threw it on the scale and all were within 1/3 of an oz off from the 5oz they were supposed to get..muscle memory is an amazing thing, you must be taught right initially tho.

@tinhinnh I worked there 2015-2017. The bread is proofed in a mold, so it is exactly 12 inches every time. If they changed that recently I wouldn't know because I haven't eaten there since I left. Has always been the lowest quality sub shop.

@@tinhinnh Current Subway employee here. What you're describing sounds like underproofed bread. Our proofer defaults at an hour, then we use a guide to make sure the bread is fully proofed, if not we proof it for longer. It sounds like the place you go to doesn't double check.

I always did extra citrus juice in the guac and heavily seasoned everything like the chicken and the steak. Also cooking the food the way it’s best (cooking steak at medium, not moving chicken so it grilled and charred a lot)

Usually items are put into smaller containers for a few reasons: 1. Its not commonly used 2. Its expensive and if contaminated they would prefer to throw out a smaller amount 3. They have a limited amount and are attempting to ration it

What the actual fuck? They pile that shit on here (Aus) and asking for extra of a certain veg they’ll make sure of it. Those measurements is like one olive per giant mouthful or half an olive per bite which is crazy. Olives are not that expensive they can’t have made that much of a profit, surely. Especially with how many subways are around, going to a nearby store where the manager isn’t as hard and the employees are more lax would mean less business in the long run. People are weird.

Everyone knows that Chipotle regularly gives smaller portions than advertised and it’s only become worse as the inflation rates increased. Its food is so-so, nothing to spend the money on when I can get, authentic Mexican food for much better value.

usually they refer to raw weight. Then, once cooked the meat lose weight. In the fastfood I worked in that was the reasons. On the menu u could read like “180 grams of meat” but under that, in a very little font u could read “raw weight”. The meat could lose about 40% of weight in the cooking.

so current chipotle worker here, as much as i would love to give you more. i can’t, i make 13.50 as a 17yo part time worker in texas so that’s very good pay for me. if i where to give you more than 1 scoop for free that could get me fired. and its the same for all chipotle locations. we don’t want to lose our jobs for other people.

The store still wants to meet its food cost percentages no matter what, so even if every mistake, cancellation, coupon, employee meal are accounted for, the only thing to bring costs into line is using less product. Then comes not weighing properly, overuse, and theft. The places giving you half to 2/3 portions are poorly managed. Bad managers let things get out of hand and over correct at the end of performance periods by shorting customers. Chipotle is designed to be inconsistent though. Measuring with a spoon is never accurate compared to weight, employees are trained to loosely scoop as opposed to pack, shake the spoon, etc. so the max you get is the official portion and the inconsistency falls in their favor.

As a Chipolte employee. The steak portions are smaller not intentionally, but because it’s a pain in the ass to get a full scoop of steak from the deep 1/6th pans. When we’re between LTOs (Carne Asada atm) we put the Steak back into deep 1/3rds, and the portions will suddenly snap back to roughly correct.

I work at Chipotle and the that’s just the store that’s the problem, at ours we regularly make sure we give at least 4 ounces and sometimes more, it still can happen where less is given but it’s a lot less likely

Chipotle employee here! The tip to get a bowl with a tortilla on the side is the ultimate hack. We have to be super careful with portions in burritos because we have to roll them (and if you get a wet burrito that will instantly be ruined) and our tortillas can be flimsy. We can and will give you more food in a bowl. Also at my store we ALL over-portion technically. If yall could see the "proper" rice portion we are supposed to give you would have a heart attack.

It's because most big corporations harrass their employees if they think they are being too " generous", for example I worked at KFC about 10 years ago and always got yelled at for putting too many chips ( fries) in the box ( even tho I was only filling it to the top, but not over filling it) because apparently a box was supposed to get a certain amount of serves and if at the end of the month we had used more than we were supposed to we all had to go to " retraining" to learn correct portion sizes

I get the same problem with Panda Express, some places the portions are fine, other locations they be trying to fight you if you question that they didn't even give a full scoop. You can always report it to corporate or on the receipt survey to make up for it tho

You also have to account for the fact that places that do advertise a certain weight for their proteins almost 101% of the time are referring to the product raw not cooked They cant keep any consistency promises that way but they can surely keep consistency in weighing the raw product

You are thinking of steaks. When you order a steak at a restaurant and see 16oz on the menu, they do mean 16oz raw. This does not apply to Chipotle or other places where you order includes chopped meat. They don't have proportioned 4oz servings of meat that are cooked AFTER you order your bowl.

I don't know how Chipotle does it (as I've never been to a Chipotle), but at TacoBell all our scoopers are designed to give the correct portion (for things that have scoopers). Since all our items are standard, instead of Subway-style ordering, every item is supposed to be a certain weight when it's completed on the scale.

I worked at a subway for a bit in high school and I’d have people ask for my work schedule so they knew when to come in for a sub. Some people serve like they have to pay for the ingredients. I got paid $7.75 an hour, they’re lucky I showed up on time. My favorite creation was when my friend came in while my manager was outside talking with the delivery guy, so I could actually go crazy. My friend ordered a footlong and told me to just stuff it with whatever I wanted. I started out with a layer of chipotle southwest sauce, then threw pepper jack and provolone down, followed by tons of steak, bacon and pepperoni. Toasted that with some onions sitting on the side next to the sandwich (so the moisture of the onions didn’t make it soggy). Then I added more chipotle sauce, jalapeños, pickles, the onions, and bell pepper. Covered that in more cheese and toasted it again. Finished it off with lettuce and another drizzle of chipotle sauce. That was easily a 2,500+ calorie sub. And even back then when we had the $5 foot longs, if I had rang it up with all the extras it would have been a $15 sub. Today it would probably be $25. She let me take a bite and man was it good, but it would have fed me for 2 days.

Steak is in a smaller container cuz you cook it to 145-150 So the safe food handling time is less, you ideally cook more catches of the steak throughout the day than the chicken. Cuz the chicken can be held in a hot box for longer periods of time without ruining the freshness compared to the steak.

As a Chipotle employee, the measurements are actually ounces of volume, not weight which explains this. However, I agree that portions suck so I always add a little extra. Also if you’d like a way to get more food for less $$ we only charge by the protein and if queso or guac is added to the meal, you can get extra rice, beans, etc for toppings. You can also get a side tortilla for 50¢. So you can get a chicken bowl with a shitload of food on it for $10.07

That only makes sense until you actually try to apply density. A quick google gives me a range for cooked meat that isn't too far off from water, so an ounce (volume) should still be about an ounce in weight. Meaning all the results shown are still valid.

As a former GM I can tell you the portion sizes are in volume not weight. When you go through training (if you’re fortunate enough to have a competent manager who trains you properly) you’re shown the “art of portioning” video and crew handbook (which is supposed to be kept at every station). You know that little plastic portion cup they give you for sides? That’s what you’re supposed to get for everything not using a ladle to serve. People are greedy though. They ask for more rice and beans and salsa than they know they’re going to eat. They just want to make sure they get their moneys worth. I can’t tell you how many times I took out the trash only for it to bust open full of half eaten bowls and burritos. Enough rice splattered all over the place to probably feed 1000 birds that day. Not to mention when you start getting greedy the BOH workers get tired of your shit and simply refuse to prep and cook fast enough leaving you staring at the FOH workers like a dumbass because they already over portioned enough for the last 10 customers in front of you. Also, content creator. The reason the steak is in the small deep pan is to accommodate whatever special protein is available. Not to mention not every Chipotle is designed the same and the tables vary.

I work at Qdoba which is kinda like Chipotle, i am pretty sure the steak was in a smaller container because they know less customers are going to order it because maybe it cost more than other proteins? We do the same to the ground beef, but it’s the same price as the chicken. This is because the ground beef is terrible and nobody wants it (except a few) so we keep it in an even smaller one. And we have freshly grilled and cut steak ready to come out from the kitchen so it’s not like we don’t have enough steak or anything like that. we are just keeping more, fresher, longer. :)

Being a former employ at Chipotle, none of the meats were weighed out at the Chipotle I worked at. They were put in containers and in the line abd when someone came through and ordered, the meat was just pit on without being weighed. I'm sure this is the case at most if not all Chipotles.

Former apprentice at chipotle, was told by my Field leader and Regional manager to always give alittle less and to never give more than one scoop of meat, this is not an employee thing, literally trained every line worker to aim for 3.5 oz or under, I’ve went to help at multiple other locations and this was the same there, they just want to squeeze every dollar they can, had to let go of multiple employees because portion sizes were too big and they would give extra scoops and not charge for double meat, NEVER GET DOUBLE MEAT! At Taco Bell, we get specific scoopers for each meat which give the almost exact amount each time. It varies 1 or 2 grams but it’s weird chipotle doesn’t have a consistent system

The system works fine. A full scoop of the spoons gets you to the right amount. Issue is people either A. Are being stupid with it and not getting the full scoop, or B: (this is the case for steak) the pans are almost impossible to scoop from, (I refer to the deep 1/6th pans) when we’re inbetween LTOs (Carne Asada currently) the steak goes back into the deep 1/3rd and it sudden becomes correctly portioned

The regular steak is in a smaller container because they sell less of it when they have the carne assada. When that goes away since its always a limited time option, they'll go back to having the steak in a large tray

Employee quality control has been the biggest issue chipotle has. They can’t get the portions right, stuff isn’t cooked well, they’re loud and noisy and don’t pay attention to customers, and they do stupid stuff like hold a bucket of dirty floor water over the food line when they’re mopping the floors.

Thing is, this is generally based on uncooked meat. Once it is cooked, it WILL weigh less. Not certain how much less, and may depend on type of meat.

i think that some of them are measured as whole not just the meat because at fast food shops the servings are not precise as to be efficient time vise (time is money)

Steak is in a smaller container because it’s cooked less well done and they try to keep it fresh since the steam table cooks the meat as well

The steak is in a smaller container because we usually have a limited time specialty meat. Once we get rid of that we replace the steak with a full pan and have more space for queso as well

As a frequent chipotle customer sometimes you gotta just ask for a little more if they skimped you on your meat. Most times they’d realize they didn’t give you the proper amount. And if you don’t that’s just bad rng getting a crappy employee lol.

I still remember working at Chipotle years ago, and a smug asshole said "that's not 4 ounces" when I put the chicken on his tacos. Which we ended up getting in a short argument argument over, because I knew my 4 ounces, and I also knew I always overserved meat on tacos because 1.33 ounces per taco looks so small. The dude asks for the manager who weighed the chicken and......6 ounces. Dude complained about getting 50% extra, lol.

If you look at the scoop they use it is a 4oz scoop. Therefore it's measured volume not weight.

Cooking meat will reduce its weight, like if you cook a 20 oz steak it’s most likely going to be around 16 oz when it comes ou, so them saying your getting 4 oz of meat may make sense due to businesses listing the before cook weight of said meat

It’s the weight of raw meat. After cooking you have to consider water loss and depending on the cut some fat loss.

This is why you get half and half of meats, you end up with far more meat that way. I learned that from quite a few buddies who worked at Chipotle, and they’re supposed to give you a set amount based on the spoon, according to when they get trained but it’s up to the person really. You can argue it if you feel you got ripped off, my buddy who was assistant manager would tell me customers would say something and he’d check that employees work and see they were just winging it 90% of the time. It’s meant to be a set amount of rice, meat, etc etc.

They probably use some trick to actually get away with this, if it came down to it. If you notice, the employee is using a 4 ounce ladle, which is full when they make your order. So, they'll probably argue that the 4 ounces being referred to is really a measurement volume, and not weight.

I think they’ve been given negative feedback on portions by management to the point of erroring on the side of too small portion, just to be safe. Every single bit of “waste” is accounted for in fast food.

They probably advertise 4 ounces but they mean when its raw (meat shrinks around 25% when cooked). Even so it would still be somewhere around 83g if that was the case (which the first one is still way off)

What they don't tell you is that you have 2 different forms of "4oz" I learned this in the kitchen. Some restaurants will use a measured 4oz spoon. So the weight isn't 4oz bc I guess they consider those containers 4oz by liquid volume. But most restaurants don't weigh, they use a sized spoon corporate forces them to use

I worked at a chipotle and we are told to give out a scoop full or maybe a little more, one time my manager told me that I put too much meet in a bowl and I was confused because I put a full scoop of meat which is what we were trained to do

As an employee The steak being in a shorter pan is because the steak has a shelf life of 45 mins on the line before more needs to be cooked.

We don’t weight it out the serving spoons we use are supposed to “weight” it out but it really depends on who’s serving it
