I’ve been away from Trinidad and Tobago for a while now, and I had a craving for some doubles! Come with me as I head to a Miami-area Trini restaurant with a friend so she can try doubles for the first time!
Doubles are a staple in Trinidad and Tobago. They consist of a fried, doughy flatbread called bara, which they top with chana (chickpeas), along with various chutneys and sauces like tamarind and chadon beni. Most doubles are vegetarian, but some variations add meat as well! My friend Diana has never tried them before, so I decided to bring her along!

TABANKA - A TRINI KITCHEN: Here, Diana and I had a massive Trini lunch that included doubles, bake and shark, aloo pies, roti, macaroni pie, dal puri, curry goat, dal, pumpkin, spinach, and potatoes. We finished with homemade coconut ice cream and rum raisin ice cream!
