Spelled pastry spreads a little when baking. Alternatively, you can use the same amount of wheat flour
Recipe:
600g/ 21,116 oz spelled flour 630 alternatively wheat flour
1g / 0.035 fresh yeast
12g/ 0.42oz salt
400ml/ 13.52oz cold water
Bake:
250 degrees/ 482F 15-20 minutes
with added steam
