Please correct me if I'm wrong but isn't ethanol a polar solvent? and if so, does the explanation you mentioned apply to the polar solvent or the non-polar solvent?

For temp could u say it causes both Intrinsic proteins and extrinsic proteins to denature and does this increase or decrease permeability?

Would u say if channel proteins denature that permeability would decrease because polar molecules can no longer be transported in the membrane?

I'd be cautious when linking transport proteins with permeability. When they denature due to heat, there is no telling how the structure changes to make them more "open" or "closed". The membrane permeability will definitely change but it's risky to say it increases or decreases.
