This has been a hellicious learning experience. In the end I used thermal putty for the mosfets and coils, had some around the VRAM (mainly because I was too lazy to clean up at this point) and used MX-4 for the CPU, GPU and VRAM.
There was a video where a guy tested some thick thermal pastes, and it seems that the ones which form peaks are good enough for a height of about 1mm. Anything higher than that and it's a job for thermal putty. Mine even had the said 1mm listed as minimum bond line thickness.
10 degrees minus seems like a good result. Clean your fans from time to time! Part of the reason why the thermal paste got so baked might have been overheating. And if you don't care about repasting, enjoy some accidental asmr.
