I love her and Chinese Cooking Demystified. The latter really goes into depth for each recipe and tends to use obscure ingredients, but I’ve learned so much from both channels.

@@pinkmonkeybird2644 I agree 100% - those are my favorite two "Chinese Cooking" Channels. There are others that are good, but these are the two best and most consistent in my opinion. I hope they are both successful and prosper, as I have learned quite a bit from them. SO much better than just reading a cookbook....

Yeh, I learned so much new stuff from just one video :S the little details like how the texture of lean meat changes vs fatty meat, why noodles should be coated with starches vs flours, etc. She is very knowledgeable and practical

Your recipes are so good! I love how vigorous they are, every detail is very well thought out. So many recipes out there do not stress the importance of using high gluten flour or high fat pork and I love that you explain why these matter. It makes a huge difference to the cooking experience!

She is absolutely right, in spite of the fact that it is several ingredients and steps, it is so incredibly worth it. Even just the pork mixture like she said, is so amazingly delicious by itself. Whenever I have made this dish, I couldn’t stop eating the finished ground pork before finishing the rest of the dish! We are so lucky too in this day and age, that we can get all these ingredients pretty easily. It is so worth it, and you can totally buy the prepared noodles if that’s what’s scaring you off, because that cuts about 75% of the work. I’m so glad you finally posted this recipe girl! I can’t wait to make it again.

Mandy has helped me up my cooking game so much. One thing I may suggest. The ingredients she shows are very important to the flavor, especially the wok. I've tried other brands and it's just not the same. Mandy is a great teacher. The food is so good, Oh my! I've been making homemade noodles since I was a kid when my grandmother taught me. Did you see Mandy fold that dough? I've never done that before and it makes so much sense. (My face is red) :)

I love this dish and make it pretty often with some shortcuts and make-aheads so it's about 15 minutes start to finish when I need to feed my dan dan addiction. Store-bought noodles, packaged lean ground pork, a jar of the final sauce mix to taste (sesame + chili oil + sugar + sichuan peppercorn powder + vinegar, etc) in the fridge and a jar of chili oil on the shelf. A quick fry up, boil the noodles, cut some scallions, assembly and I'm good to eat . The sauce mix is so good that I will often use a little bit of it to punch up other things. Mix in with mayo for burgers and sandwiches, etc.

I finally got a chance to make this tonight! Absolutely amazing. I made Hon yo style chili oil from Chinese cooking demystified, but otherwise followed your instructions exactly. My only note is that I ended up using about 2/3 of the noodles for my 2 servings tonight, and with any less I think it would have been too much sauce. Soooooooooo delicious.

Its pretty much how I do it. I just marinate my pork w/salt, sugar, cooking wine, and soy sauce before cooking it.

Yum that was really great! I tweaked the recipe. For the noodles I added 1 Tablespoon the lard fat from frying the pork as I usually put EVOO in my Italian pasta. The bread flour added chewiness to the noodles and the fat gave a silkiness. I did have the set bean paste, need to put that on the next Amazon list so I used honey for the minced pork. And we like our DanDan noodles to have more peanut/sesame sauce so I put like a 1/4 cup per dish or even more. I’m so happy there is enough noddles for tomorrow! Thanks for the recipe!

@@jus4funtim Boil the potatoes for 25 minutes Boil the sauerkraut for 25 minutes. Add some juniper berries, and at a later stage, shoarma spices and pineapple cubes. Add the smoked sausage and cooked pork belly and mix it. Serve with pickles and mustard ! You love it !

@@peerx7866 You might want to check out some KZitem videos on how to make homemade Sausage, it's not that difficult and the equipment isn't too expansive, you really only need a smoker and a meat grinder. the smoker can be homemade out of free wood palates and the meat grinder is to grind and stuff the meat , for about $150 US . Mandy, thank you so much for this recipe. It made all the difference for me. This is the single most helpful recipe I’ve followed to make decent homemade Chinese noodles. I finally decided to invest in a kitchenaid mixer after 30 years as a home cook, and this is the first recipe I used with the machine. Your instructions are flawless and precise; I would not have been successful without this video. I now have frozen noodles just waiting for my next bowl of soup or fried sauce toppings. You are the best!!

Everything I have cooked from your videos has been most excellent. Wow, I will be making this soon for sure! The first time I ever tried Dan Dan noodles was when I followed the recipe from another YT channel - it just blew my family away with how yummy it was. I then saw it on the menu of a Chinese restaurant, but sadly it was quite disappointing compared to the one I'd made at home. Now I would very much like to give this one a go as it looks ever more amazing 😋. Thanks for this very comprehensive tutorial.

I followed this exactly and let me tell you, delicious! I wouldn't call it a difficult dish so much as a time consuming dish, and I cheated a little and found fresh homemade egg noodles in my Asian Market near home. Was it worth it? Yes. I even followed and made homemade chili oil, it's dynamite!

Thank you for this recipe. Between you, Food Ranger, and Chinese Cooking Demystified, I have been exploring the delicious intricate flavors of authentic Chinese cuisine. For this recipe, I combined your ingredients with Chinese Cooking Demystified's version and it came out absolutely delightful! My second batch, I decided to fry the pork with all the ingredients you and Chinese Cooking Demystified's listed and added spicy black bean sauce and Pixian Doubanjiang (for its irresistible aroma) and topped it all off with Laoganma Spicy Chili Crisp. OMG my taste buds and nostrils were in food heaven!

i’m from ukraine, and we have a wonderful chinese restaurant in our city, where chinese chefs work, they even have “tofu, chef’s mother style” and they served dan dan noodles, they are a big part of my childhood and i love them so much😭😭

This is the best chinese cooking channel on youtube, because you don't only give an authentic recipe, you actually tell us why we do what we do. Understanding the recipe is way different than just following it. I love this channel and Magic Ingredients' channel. Ever since I started cooking Chinese at home I stopped eating out. My favorite chinese cuisine is Sichuan ♥️

I don’t eat pork, I used turkey beacons or chicken meat sometimes, work just fine. I guess vegetarian can use mushrooms or tofu as substitution.

You did a great job with this! This is my family's favorite noodle dish! I have found ya cai in the Lao Gan Ma brand, difficult to find, but the best, and spicy already. I won't use 花椒粉,but rather 花椒油,it's so aromatic and doesn't give a gritty texture like the powder. My daughters are from Jiangxi (领养的)but love chuan cai as if they were raised in Chengdu, Zigong, or ChongQing! We love your channel! Welcome to the US! -加油!

I had the opportunity to visit Mianyang back in 2017. I had the Dan Dan noodles at dinner with our group. It was incredible! I couldn't wait to come home and try the recipe. I would say it was very good for a first attempt at making it. Even purchasing the premade noodles it take a fair amount of effort. But, it was fun to make the recipe. Nothing else like it anywhere! Fantastic! I thoroughly enjoy your channel and the recipes. Next for me will be Kung Pao chicken...
