Ingredients:
Pork neck: 2 kg
Olive oil: 120 ml
White wine vinegar: 50 ml
Honey: 50 g
Lemon: 1
Large onion: 1
Garlic cloves: 3-5
Mustard: 2 tbsp
Salt: 2 tbsp
Paprika powder: 2 tbsp
Oregano (dried): 2 tbsp
Cumin: 1 tsp
White pepper: 1 tsp
Fenugreek: 1 tsp
Thyme: 1 tsp
Instructions:
Slice the onion into rings, and the garlic into slices. Squeeze the lemon to extract its juice.
Mix onions, garlic, olive oil, white wine vinegar, mustard, honey, spices, and herbs.
Slice the pork neck, flatten it, and marinate it in the mixture, letting it rest in the refrigerator for 24 hours.
Thread the meat onto skewers, wrap them in aluminum foil, and pre-cook on a preheated grill at 180°C for 1 hour.
Increase the temperature to 220°C, remove the foil, and grill until the core temperature reaches 70°C.
Slice the gyros into thin pieces and serve with tzatziki, flatbread, and salad.
