FOR THE MARINATING:
Mutton= 1 kg
Ginger Garlic Paste= 2 tbsp
Salt= 1.5 Tsp
Red Chilli Powder= 1 tbsp
Green Chilli Paste= 1 tbsp
Raw papaya paste (with peel) - 2 tbsp
Turmeric Powder= 1/2 tsp
Crush green cardamom - 1/2 tsp
Brown Onion= 1 cup
Green Cardamom= 8-10
Cinnamon Stick= 2-3 inch
Nutmeg (Jayfal) - 1/4 of a nutmeg (grated)
Caraway Seeds= 1 tsp ( Shahi Jeera )
Saffron - 1 pinch
1/2 tsp garam masala
Fresh Coriander= handful - chopped
Fresh Mint= handful - chopped
Curd= 1 cup
Cooking Oil= 1 cup for browning onion
4 tbsp oil balanced from fried onion
Water= 1/2 cup
FOR THE RICE:
Basmati Rice= 1 kg
Water As For Needed (4 litres)
Cinnamon Stick= 1 inch'
Bay Leaf= 2-3
1/2 tsp black peppercorn
Crushed Green Cardamom= 1/2 tsp
2 black cardamom
Caraway seeds 1/2 tsp
Slit Green Chilli= 3
Salt= 4 tbsp
Fresh Mint and coriander leaves = handful
FOR ASSEMBLING:
Saffron 1 pinch
Yellow Food Color= 1/4 tsp
Desi Ghee= 2 tbsp
Fried Onion - handful
