I have a way of tenderizing flank steak before cooking that works every time. I lay it flat in between two sheets of either plastic wrap or waxed paper, then using a rolling pin, firmly roll over the meat starting at the center and working out to the edges, in all directions. Put some muscle into it! I do this for a good 5-6 minutes. I then let the meat rest for a few minutes before continuing with my recipe. The only other thing to do is make sure to cut the meat across the fibers rather than with them. Tender every time. :)

I've never marinated a flank steak, only rolled it this way. I can't remember what cooking show I saw this technique used but it was at least 20 years ago. 17 years ago we had friends from the UK visiting us and one night I decided to make this recipe using flank steak. The wife of the couple staying with us was a chef so I was a bit nervous while she watched me prepare meals. :/ When she saw me using a rolling pin on the meat she was surprised and asked why I was doing this. I explained why and later while we were eating dinner, she saw how tender the meat was and said, " I have to remember this!" :)

thanks for the tip, I wish I had looked it up before. I struggled through this video because I was looking for the tips only rather than a full recipe and haven't seen anything new here. I marinated my steak, grilled it direct then indirect, cut it across the grain and STILL it was chewy :( this is the 2nd time i'm trying flank and I don't think I will bother again. Not sure if it's the beef or me but since it is a pricey piece I will stick with rib or sirloin. If I ever decide to flank again I will try the rolling bit

McCormick's meat marinade is awesome with flank steak. Don't be shy with the marinatingtime. We always let it marinate overnight and we also use a fork to poke holes through the steak so the marinade can get all the way in.

Excellent tutorial on how to prepare this wonderful cut. Very clear , detailed and just easy to watch and learn. I'm doing this tonight but I'm using a combination of lemon and lime juice (I didn't have enough limes cause I needed it for my coconut).

The marinade could also include a plain greek yogurt. The lactic acid will help get the marinade further into the meat, just make sure you temper it if there's lots of acid in the marinade or you won't be happy when they meet one another.

Love flank steak. Great video! My dad taught me the correct way to cook and slice it just like this. It’s my favorite cut for making beef jerky. Yum!

It’s nice to see you using a modest priced cast iron grill (Lodge). Too many professional cooks use high end equipment the average person can’t afford. It would be nice if you could address “carry over cooking”. A thin cut like the flank won’t have much, but calculating it for thicker cuts is (for me) guess work.

Love your set. Love your steady explanation and delivery of things. But your audio on your mic is to low. I had YT volume all the way up and my MacAir laptop volume all the way up and it was hard to hear you. I suggest in your editing to pump up your audio meters a little bit. 350 F check it every couple min until the internal temp is around 128 F, slightly cover and the residual heat should bring temp to medium rare by the time it has rested

Wow, this is the best flank steak I've ever had. Followed his steps and it was super tender and juicy. I'm Mexican and one always disliked flank steak, as Mexicans notoriously tend to over cook their meat! I'm a medium rare type girl!

Always so helpful videos! Btw, after he put the meat inside the marinating bag he didn’t rinse his hands. Is it ok to touch the raw meat then not rinse our hands and touch other things? As long as the raw meat is fresh is it ok? I always have a paranoia of rinsing my hands(including any utensils that raw meat may have touched) after handling raw meat so.. I was wondering! Can someone help me? Thank you in advance! (Sorry about my English.. My first tongue is not English..;( )

I need to know how long to keep it in the oven - maybe an estimate - it doesn't help to get an internal temp...is it 5 minutes or 30 minutes...with this cut of meat the time in the oven can ruin the meat.

Flank steak can be at different thicknesses so getting an internal temp via an instant read thermometer IS the most accurate way. I would guess it wouldn't take very long, so test it every couple of minutes.

Ice white line across the grain sprinkle baking soda on it the ziplock bag massage it a little let sit for 15 minutes. Put it into a colander rinse off slightly. Drain the water then add one egg white only. Massage the meat. Let it sit 15 minutes. Add cornstarch. Fry in a small amount of oil. Take it out. Cook your vegetables. Add your meat. Most tender meat you'll ever eat
