I'm a southern American who grew up eating gumbo, and I think this is an interesting idea. The basics of gumbo are very similar to Vietnamese food anyway. I don't understand Vietnamese, but I was able to follow most of the instructions just by what I could see. The one thing I don't know is what the white powder is that was added near the end. I don't think tapioca starch can be added to hot broth, so is it rice flour? Thank you. :)
