Boiling ribs is as TABOO in the barbecue community as using starter fluid on your charcoal or using liquid smoke. I decided to resurrect this method of cooking ribs this week because it was the way my parents made ribs when I was young. We LOVED them! We didn't have a smoker or anyone that knew how to use one. So I decided to modify their technique just a little to see if I could come up with some good ribs.
I do believe the key to this process is seasoning the water adequately. I started out with about 2 1/2 quarts of water. I brought that to a boil and then reduced the heat to a SLOW SIMMER (185°F-ish). I added a quarter cup of salt, a quarter cup of barbecue rub, a quartered onion, six cloves of smashed garlic, and a couple healthy dashes of hot sauce. I cut the rib rack down into individual bones and dropped them in the water. This was an extra meaty rack of baby back ribs (4.2lbs for the single rack) so I decided to let them bathe in the water for 1 hour and 15 minutes. With a smaller rack I might have just let them go for an hour.
Then I removed them from the water, sauced them, and tossed them on my Kamado Joe at 400°F over indirect heat for 15 minutes. Then I turned them and sauced them again and let them go for another 15 minutes before taking them off for a 10 minute rest. My commentary and results are in my discussion at the end of this video! These ribs were good! I will do this again.
