To Make Baby Corn Masala
Baby Corns - 400 Gms
Oil - 1 Tbsp (Buy: amzn.to/3KxgtsM)
Ghee - 1 Tbsp (Buy: amzn.to/2RBvKxw)
Whole Spices
( Cumin Seeds, Cloves, Cinnamon, Cardamom )
Onion - 2 Nos
Ginger Garlic Paste - 1 Tsp
Green Chilli - 2 Nos
Turmeric Powder - 1/2 Tsp (Buy: amzn.to/2RC4fm4)
Cumin Powder - 1 Tsp (Buy: amzn.to/2TPuOXW)
Coriander Powder - 1 Tsp (Buy: amzn.to/36nEgEq)
Kashmiri Chilli Powder - 1 Tsp (Buy: amzn.to/3s8bZT2 )
Salt - 1 Tsp (Buy: amzn.to/2vg124l)
Tomato Puree ( Tomato - 3 nos )
Water - 2 Cups
Cashew Paste ( 12 nos )
Garam Masala - 1 Tsp
Kasuri Methi

METHOD:
1. Cut the babycorns into desired shape and boil in salt water for 5 mins on high flame.
2. After 5 mins, remove the babycorns from the pot and keep aside.
3. Take oil and ghee in a wide kadai. Once it is hot, add cumin seeds, cloves, cinnamon and cardamom.
4. Add finely chopped onions and saute until they turn golden brown in colour.
5. Next add ginger garlic paste, slit green chillies and saute for a few seconds.
6. To this, add turmeric powder, Kashmiri red chilli powder, salt, coriander powder, cumin powder and mix well.
7. Add the tomato puree and cook on a high flame until the raw smell and excess moisture is all gone.
8. Add partially cooked baby corn pieces and mix until the masala coats the baby corn pieces.
9. Add 2 cups of water, mix, close the kadai and cook for 10 mins on a medium flame.
10. After 10 mins, check for seasoning and see if the baby corn is cooked through.
11. Once they are all good, add 12 soaked cashewnuts' paste to the kadai and mix well.
12. Add garam masala powder and crushed kasuri methi leaves.
13. Garnish with finely chopped coriander leaves.
14. That's it, restaurant style Baby Corn Masala is ready to be served hot and nice with any roti of your choice.
