-1 cup buffalo sauce
-2-3 chicken breasts
-S&P
-I bag shredded cheese of choice
-tortillas
1-Cook the chicken and buffalo sauce in the instant pot on high for 15 minutes then a 5 minute natural release shred with a hand mixer or two forks. Season with S&P to taste.
2-Heat oven to 350
3-Put down a sheet of parchment paper
4-assemble your quesadillas with either just cheese for the picky eaters or buffalo chicken and cheese (use a slotted spoon or fork to get the chicken but not the juice)
5-bake for 10 minutes then let cool and slice with a pizza cutter
*could totally add sautéed peppers and onions if you want to
**these taste great leftover as well!
