I've done the same idea before with different ingredients for the stuffing... spinach and feta with herbs. This would definitely be a hit as well! Pork loin is very versatile and quite often overlooked as a special occasion meal choice, in my opinion. Great recipe here!

I just made one and found this video. I pouned out some loin to make a roulade. Put my homemade pecan mushroom dressing in it i had stashed in the freezer. I make these things all the time. Excellent video my lady.

Oh Tatyana, this looks incredible! We love pork loin, too, and this will certainly add to the festivities of our holiday! There's such a richness of flavors gathered in the stuffing-perfect for pork. And mashing the garlic is such a great idea for the gravy! I think I'm going to roast the sweet potatoes and then mash them so we can put the gravy on top of them, too. I can just see this on the table with the blazing fire in the background! Awesome Tatyana! Thank you!

@@TatyanasEverydayFood I actually sell stuffed pork loins. I stuff with Boudin sausage, apple crisp apples and fresh spinach. I season with two seasonings. Then Pam my wife, makes a bacon weave that covers the loin. Then we tie it with butcher twine. It’s a work of art and it’s delicious. Of course, we are serving southern Cajun folks. You are truly a brilliant person. Pam and I watch your channel often. Merry Christmas.

So. I find your content relaxing to watch. I usually wait until the end of the day when I’m winding down to watch. I mean, sure, you are not at all difficult to look at,🙃, but you also have a pleasant speaking voice, your speaking tempo is fairly slow and you articulate things very well. I’m not sure where you are from but I know where you are not from. NY, NJ, etc. Today I’m actually making this dish. So I end up listening to it many times as I get to different parts of the recipe so I play it at 1.5x. 😂 It totally transforms you! You sound like everyone I grew up with in NY! And when you got to pounding out the pork I almost cried I was laughing so hard. It was like watching a slasher movie! Well done.

@@TatyanasEverydayFood It was fantastic actually. I knew that I wanted apples in it but everything else that I found had some form of bread in the recipe and I really didn’t want it. Yours was the only one I found that didn’t. The cranberries were great and I mean, Cognac! Brilliant. Was the Cognac a reward for actually watching the video? I didn’t notice it in the recipe, lol.

Hi! I haven't tried freezing the loin before. However, you can stuff and roll the pork up to 2 days in advance and keep it well covered and refrigerated. Hope you love the dish!

You could try this with turkey breast, too. The filling would probably work for 2 to 3 large turkey breasts. Make sure to adjust the timing, too.

I love Ruffoni, too! I have many of their pans :) The Cu Artigiana was a really lucky Home Goods find. Otherwise, it's really hard to find online!

kudos on the tying it up like that. I use lower cook temps and an apple juice and stock mix added for moisture during cooking. if you live near a local cider mill, even better.

Good Day Chef , Excellent flavor combos. I would love to try that cooked on an open flame rotisserie. Think I may have my butcher make that in a pork sausage for me.
