Today, I’ll show you the Bacon & Cheese Volcano, a dream of cheese, bacon and a delicious filling. Not only does it look great, it also tastes absolutely fantastic!
Here the ingredients:
800g Ground Meat half / half (Beef & Pork)
200g Bacon (Thick sliced)
200g mushrooms (brown or white)
2 pointed sweet peppers
3-4 Shallots
2 tbsp of my "Pure BBQ" spice mixture (or the rub of your choice)
200g camembert cheese
4 tablespoons Made for Meat "Bacon-Jalapeno" for glazing
1 cedar wood plank
Preparation: Cut your bacon and vegetables up as shown. In a cast iron skillet brown the bacon, and then add your shallots and peppers. Moving your peppers off to the side of the skillet add your sliced mushrooms and sauté the mixture until browned. Add you favorite BBQ rub to your meat mixture and form a large “beer can” type burger-loaf as shown. After forming, lay strips of bacon around the outside of the volcano as shown. Now once you have the form right and a pocket for your fillings, add your vegetable mixture to the “volcano”. Now cut up your Camembert cheese as shown and top off the volcano. Grill on a Cedar Plank @ 350F-400F for 45 minutes. Now baste with your favorite BBQ sauce, cooking about 10 to 15 minutes additional. Remove and set to cool a few minutes, cut and serve! This really is the “Hammer” or the Bomb as you would say in English! The combination of the mushrooms and onions and cheese and meats is really unbelievable! For some variation you can use different cheeses or even make this as the traditional “Beer Can Burgers”! Enjoy!
