This Stuffed Portobello Mushroom Recipe is one of my favorites of all time. Perfect for a quick dinner, side item, or appetizer for your football parties, tailgating, camping, or just hanging in the backyard.
Ingredients:
• 12 - 15 Portobello Mushroom Caps
• 1 lb. Favorite Sausage
• 12 oz. Thin Sliced Bacon
• 2 Medium Sized Jalapeños
• 1 - 1 ¼ Cup of Shredded Cheese
I used the RecTeq 380 Bullseye Pellet Grill/Smoker set at 275 degrees. You can also use your smoker, charcoal or gas grill, or cook in your oven.
Directions:
1. Hollow out your Portobello Mushrooms (or buy Mushroom Caps)
2. Dice up 2 Seedless Jalapeños (Leave the seeds in if you like spicy)
3. Combine your sausage, jalapeños, and cheese in a mixing bowl
4. Pack you sausage blend in you mushroom caps
5. Wrap each stuffed mushroom with bacon
6. Place on the grill/smoker and cook until they reach 180 - 190 degrees internal, approximately 45 minutes. Checking with your Thermapen instant read thermometer
7. Pull off the grill/smoker
8. Enjoy
