Hi, I find it fascinating that an American is attempting bael fruit. When I was a child (in eastern costal part of India), Bael fruit juice was the best summertime beverage. Fruits that ripen on the tree and naturally fall off have the finest flavour. It becomes a little softer and frequently has cracks when it is fully ripe. It smells strongly like fruit and is really aromatic. A good ripe bael will have a pale golden colour with some cracks and an overpowering scent.

I don't know why you had a bad experience with wood apple. I am from Srilanka and it is a favorite of mine and the wild elephants there. The key point is to find the ripe one and they vary in taste slightly. Scrape the pulp inside of the fruit with seeds and mix it with some Kitul or palmyra jaggery will do. Eating plain is not the best. They do sell wood apple jam and cordial you will not find it anywhere else.

I've tried it a few times in West Bengal. It was usually quite ripe and bright orange. People would often drink it the on days that they were fasting from doing foods. I've definitely paid the price for trying foods like this over there a few times... Eventually I will make some trips to the villages and remote regions of Nagaland, and sample our wild fruits. I bought it because I remembered seeing it on this channel. I didn't really like it that much, though. I mean, it's ok, and I'm going to eat the rest of it, but it's not something that I would buy again. It has a weird funk to it, like a fermented wine kind of smell that I don't like.
