Adobo is a type of marinade or process of slowly cooking meat or vegetables in a sauce including soy sauce, vinegar, and crushed garlic.
It has occasionally been considered the unofficial national dish in the Philippines. With hundreds or more variations of Filipino Adobo, it has also become a favorite of Filipino-based fusion cuisine. My Baked Adobo Ribs recipe is an example of this Filipino Cuisine Fusion which I made for my husband who doesn’t prefer Adobo as his favorite Filipino Food. Now, he does not only like it, but he loves it to the bones!

1kg Pork Ribs
1 whole Garlic Head
1/2 tsp whole black pepper
Dash of ground black pepper
1/2 cup soy sauce
1/2 cup water
1/2 cup vinegar
50 grams butter
1 Tbsp Honey
2 heaping tsp ketchup
4 big Tomatoes (optional)
1 Tbsp minzed Chives (optional)
