2 large fillets of cod
1 leek, chopped
200 g chorizo
3 sprigs of thyme, finely chopped
1 clove of garlic, finely chopped
200 ml chicken stock
Salt
Pepper
STEP 1: FRY THE CHORIZO
Add the chorizo to a hot pan and fry until it starts going crispy.
STEP 2: COOK THE FISH
Season the fish and pat dry, then fry in a little oil until brown on both sides. Transfer it to a baking tray and bake at 170 for about 5 minutes. When it's done the fish should still be a little soft.
STEP 3: MAKE THE SAUCE
Add The onion, garlic, chilli, thyme and leek to the chorizo and fry for a minute or so, then add a little stock to bind it together and cook for a few more minutes.
STEP 4: PLATE UP
Plate up some of the chorizo mixture into bowls and top with the cod.
