Recipe for: Roasted Eggplants in Jars. Winter!
Necessary products:
5 kg. eggplants (pre-washed and dried)
Salt to taste
Method of preparation:
Pierce the eggplants in several places with a knife or fork so that they do not burst during baking.
Bake the eggplants in a pepper oven.
Put the finished baked eggplants in a pot with a lid to stew.
Peel the eggplants and arrange them in a colander to drain.
Coarsely chop the drained aubergines and arrange them on a tray.
Salt lightly.
Arrange the aubergine in 580 ml jars with screw caps. Jars and lids must be pre-sterilized, washed with hot water and dried.
Fill the jars to the brim.
Close the jars with the lids and tighten well.
Arrange the jars in a deep pot, on the bottom of which you have placed a towel.
Add water a finger above the caps.
After the water boils, boil the jars for 25 minutes, then remove them.
Turn the jars upside down and wait for them to cool.
Then store the jars in the cellar for the winter.
