Baked mackerel with vegetables, a tasty and very simple recipe. Cut the vegetables into rounds, season with salt and pepper, a little oil, then place the fish in which we placed lemon slices. Garnish with tomatoes on top, add a few tablespoons of tomato paste, a little water and leave in the oven for about 25 minutes. Cover the pan with foil to stifle the vegetables and fish. Then raise the foil and leave for another 25 minutes to help the fish catch a reddish crust on top.
