The recipe :
2 medium sea bass - 800 gr.
1 kg. coarse sea salt
2 egg whites
1 lemon
Preparation method
1. Clean the scales, guts and gills.
Washe very well and dries.
It is best to leave in the kitchen for 1 hour, then dry very well again. This is the most important, because the meat will absorb a lot of salt and it will become salty.
2. Beat the egg whites well.
Mix with the salt to get bigger crumbs.
3. Fill each fish with lemon wedges.
4. Forms a thin layer of salt on a baking tray to form a "bed" in which to place the fish. Cover with the remaining salt.
5. Place the fish in a preheated 180 ℃ oven and bake for 40 minutes. If the fish is larger, bake it longer.
6. After removing, wait ten minutes and then with a knife and a hammer break the salty crust, remove the fish and clean the salt with a brush.
