Here is the recipe for ease of reference
GF Sponge Cake
Ingredients
4 x eggs
1 teaspoon white vinegar
100 grams fine white sugar
65grams rice flour
25grams corn starch/corn flour
1/4 teaspoon salt
30grams milk
22grams oil
1x teaspoon vanilla essence
baking paper
baking tin
Method
Beat egg whites and vinegar with 100g fine sugar once well beaten, add 4 egg yolks and combine/mix/fold well with whisk. Once well combined add rice, corn starch and salt through a sieve in three lots and combine well with whisk. mix the milk, oil and vanilla essence and pour mixture into batter and combine well with spatula. Pour in a baking paper lined 18cm baking tin and bake in pre-heated oven at 150° C for 35mins, then 170°C for an additional 3 mins WITHOUT opening the oven.
