Alex (age 6) & I are excited to bake banana nut bread in our Electrolux convection microwave oven.
Evan (age 7) eagerly helped us eat the banana nut bread.
Recipe:
2 ripe bananas
1 cup sugar
1/2 cup butter, melted
2 eggs
1 1/4 cups self-rising flour
1 tsp cinnamon
1 tsp vanilla
3/4 cup chopped pecans (optional)
Cream melted butter and sugar. Add eggs and vanilla. Stir in flour and cinnamon. Mash bananas and stir them into the mixture. Add pecans.
Bake in a loaf pan at 350 degrees for 55-65 minutes until firm and golden brown.
