How many layers before you put on filling?? Then how much on top??

Hi--using the Athens phyllo box which contains two sleeves, use one sleeve on the bottom, then filling, then one sleeve on top. Each sleeve is about 20 layers, so about 20 layers on the bottom and 20 layers on top.

Definitely have to work quickly, as you're spot on about the drying phyllo. I've noticed that even if the phyllo is a little dry and imperfect in the cutting, in the end the diamonds look as good as any other. I also recommend buttering the top couple of layers to prevent drying and help with cutting the diamonds. I just heard from someone that they refrigerate the buttered layers, then cut. Great idea.

Hi--this is phyllo dough, which is very thin sheets of dough that you buy pre-made in the freezer section of the grocery store. These thin sheets are baked into the crisp layers of baklawa.
