Cut the cassava into chunks and peel off the skin.
Split the cassava chunks down the middle remove the centre stem and discard. Using a fine grater finely grate the cassava chunks. Place the grated cassava into the centre of a clean tea towel or some cheesecloth and squeeze out as much of the liquid as possible.
Place the squeezed cassava into a bowl and break it up into crumbs.
Add a little oil into a frying pan and place in a food ring. Add some of the cassava crumbs into the ring and press down to form small round flat cakes and fry for a couple of minutes on each side then remove and allow to drain on kitchen towel.
In a small bowl pour in the coconut milk. Cut the cakes into quarters add the pieces into the milk and allow to soak for as long as possible overnight if possible. Heat a pan of oil, enough to shallow fry the cakes. Add the cakes to the oil and cook until golden brown, remove and drain.
